One of the best things about blogging is when I find other friends (especially Dan’s friends) are reading my blog and following it. I love it. Never thought his friends would follow and it makes my day. Last week on my FB page (have you liked it? If not go for it, giveaway when I hit 250 likes!) I posted about having cucumbers coming out my ears. No kidding I’ve picked 2-3 cucumbers minimum a day for about 2 weeks now, I do love them but I was tired of eating them just raw with salt and pepper. I had some great feedback with ideas on using my cucumbers. One of Dan’s friends even provided a full recipe via text to Dan for me – so I decided to use it for inspiration (and name it after him :)) I deviated a bit from his original recipe but it was still delicious!
Benton’s Cucumber Salad
- 2 cups finely chopped, seeded peeled cucumber
- 1 cup finely chopped seeded tomato
- 1/2 cup chopped red onion
- 2 Tbs minced fresh parsley
- 4 tsp miced fresh cilantro
- 1 garlic clove, minced
- 1/3 cup greek yogurt (you could use sourcream)
- 1 1/4 tsp lemon juice
- 1/4 tsp seasoned salt
- tortilla chips
In a small bowl, combine the first seven ingredients. In another bowl, combine the greek yogurt, lemon juice, and seasoned salt. Pour over cucumber mixture and toss gently to coat. Serve right away 🙂
Ok – so that recipe took care of some of my cucumbers, but still love to know – how do you enjoy cucumbers?
